Halloween Recovery Recipe








Teriyaki-style Burdock and Carrots

Adapted from The Modern Vegetarian Kitchen by Peter Berley

2 tablespoons fresh ginger, peeled and finely chopped

1/3 cup brown rice syrup (can substitute maple syrup)

1/3 cup naturally brewed soy sauce

1/3 cup mirin (Asian cooking wine)

2 tablespoons toasted sesame oil

4pieces of burdock cut into matchsticks

4-6 carrots cut into matchsticks

2 tablespoons lightly toasted sesame seeds

2 scallions, green and white parts chopped for garnish (optional)

  1. In a wide heavy saucepan over medium high heat.
  2. Combine the ginger, rice syrup, soy sauce, mirin, and oil. Bring to a boil.
  3. Add the burdock, reduce the heat to low and simmer, covered, for 10 minutes.
  4. Add the carrots and continue cooking for 20 minutes until the vegetables are tender.
  5. Remove the pan from the heat and stir in the sesame seeds.

6. Serve hot, garnished with scallions or chill and serve as a salad over watercress with lemon wedges on the side.

Burdock is a root vegetable with a sweet earthy flavor, part of the sunflower family. Look for it in health food stores like Whole Foods. Burdock has more protein, calcium and phosphorus than carrots and is an excellent source of potassium. It is high in iron and can help build blood during times of low hemoglobin.

It is a wonderful herb which restores the body to normal health by cleansing and purifying the blood, supporting digestion and the elimination of toxins. It is an anti-carcinogen, a treatment for arthritis, a liver detoxifier.

Improves fat metabolism and acts as a diuretic. It is an excellent herbal blood purifier that helps to detoxify the blood and lymphatic system. Burdock aids in the elimination of uric acid. Burdock root can also help to reduce cravings and hunger and thus assist in weight loss.
